Stop sharing folders

i recently found out from a User that she can go to File - Open - Open other
peoples foldes and type in a name and access their Inbox - even the CEO of
the company. I must stop this from happening immediately.

How do I stop Users from sharing other peoples folders?

Check the permissions on the Users container in Active Directory. More than
likely, users are inheriting overly broad permissions from a parent object.
