Strange symbols in email replies

When I reply to an email the text in the original email has symbols inserted
into it? Paragraph marks, return arrows, and dots between words. How do I get
rid of that and back to normal text?

DeadHead EggHead Alert!
Replying to a post from 2007? DUH!

The Egghead Cafe has a contest underway. The poster who replies to the
oldest, deadest MSNews group article wins a free Android phone.

(Okay, I don't recall which is the phone, and which is the OS. This is just
for humor; poking fun at those cracked eggheads.)
