Yes, you can control what styles are shown in the ribbon.
Taking off styles you don't want is easy: Right-click the style on the
ribbon and click "Remove from Quick Style Gallery".
To add other styles that you do want:
Press Ctrl+Alt+Shift+S, or click the little button in the bottom right
corner of the Styles group, to open the Styles pane. Click the Options link
at the bottom of the pane and choose "All styles" in the top box; click OK.
The pane now shows all available styles. In the list, right-click any style
and choose "Add to Quick Style Gallery".
If a style doesn't show up in the ribbon after you add it to the gallery,
it's marked as "Hide until used". You can change that as follows: In the
Styles pane, click the Manage Styles button (the rightmost of the three
similar buttons) and click the Recommend tab of the dialog. Select the style
to change, and click the Show button.
