Go to Format -> Style, select the "problem" style (probably "Normal")
and uncheck the "Automatically update" box.

Move your mouse cursor somewhere in the text that's been changed, then click
on Format>Style. You should now see a new window, and my guess is that
"Normal" is highlighted in the style list on the left side of the window.
Click on the Modify button on the lower right side of the window, and in the
new "Modify style" window that shows up, make sure you uncheck the box next
to "Automatically update".

A short explanation: most of your text is based on the Normal style, unless
specified otherwise. You have somehow managed to get Word to automatically
update the Normal style based on your formatting; in other words, whenever
you change a paragraph in Normal style, you make these changes to every
paragraph based on Normal in the entire document. Disabling that option
should prevent this from happening. By the way, you can also use the Modify
style window to change Normal back to its initial state, but you will need
to do that manually, i.e. change the font family and size and so on.
