Subject line in Outlook changes Spontaneously

A lot of our users experience problems with spontaneously 'changed'
subject lines in Outlook.
When sending an e-mail or planning an appointment the enter a subject
line.
Lets say for instance the original subject line they entered was: "Mail
for you Boss"
After sending the mail/appointment they found out that the subject line

was changed in: "???????? Mail for you Boss", or
"???????? Mail for your Boss".
This happens every time they create/sent a new mail or change/view an
existing mail.

We use Exchange 2000 (SP4) and Win2000 (SP3) DC's in combination with
Outlook 2000 (SP3) clients on XP (SP2) PC's

Any idea what causes this strange behaviour?

if it's really question marks, it's a character encoding problem. Are the
ones it happening to using a slightly different windows set up than the
others?

It's not only question marks. Sometimes it's part of the
departmentfield0entry in AD or display name. Sometimes it's complete rubbish
that's placed in front of the subject line.
It affects users who whave mailboxes in 3 different stores (all in the same
storage group on the same server)
It does NOT affect users in the other 2 storage groups on this same server.

All users have an identical desktop (centrally managed) with roaming
profiles.
Strange thing is that it started spontaneously, last monday (2nd eastern
day) when all IT engineers we're at home so no changes were made to
configurations
