I too want to stop the bouncing -
Even though I know (now) it's probably a mail error, when I click back to
Entourage (2004), I don't see any sign of a reason for the bouncing. Nothing
is highlighted, lit up or otherwise asking for attention - I had no clue why
the icon was bouncing until reading this thread.
You'll see a warning yellow triangle with exclamation point in the bottom
right of the main window. Double-click it, or press cmd-8, or select Error
Log in the Window menu, to open the Error Log. You'll see all the errors,
date-stamped. Double-click the most recent item to get the full error
description - such as it is. Theses are usually server errors, and the
server doesn't tell you much.
My mail servers often are busy, and send back error messages to try again.
It means nothing. Next time the mail is checked, the server is usually not
busy.

I don't use Exchange or anything like that, and the only errors I get are
the try again kind.
So, I'm tempted to take the icon out of the dock... maybe that will stop it.
No. A running application cannot be removed from the dock. How about hiding
the dock? cmd-opt-D. Even when I turn on "Animate" nothing bounces when the
dock is hidden - I haven't got a mail error yet but I imagine it will be the
same. Just press cmd-opt-D, or hover at the edge of the screen (better). In
Panther - much more fun - try cmd-tab.
