Switch from U.S. to British spelling in an existing document?

How can I switch from US to British spelling in a Word doc that's already
been created in US English? I have enabled UK English in my Office
defaults... I have switched to UK English in the Tools -> Languages setting
in the Word doc itself (or tried to -- it doesn't seem to stick)... Don't
know what else to do. Do the language settings work more reliably if you set
them when you first create a new document?

As you've guessed, things are more reliable in new documents once you've
followed *all* the rules (a few more things you need to do) but the last
section covers the best you can do on existing document.
