Sure! Tools | Autocorrect options will let you specify a keyboard sequence
that will be automatically converted to a symbol.

You can use the Character Map applet (Start Menu | Programs | Accessories |
System Tools) to find the specific symbol and copy/paste into the AutoCorrect
dialog box in OneNote.

In addition to the approach that Erik suggests you can use Alt+X
shortcuts. But you need to know the Unicode for the symbol in
question. You can get those from Character Map if you need to.

For example, type 00AE then hit Alt+X and you get ® (the registered
trademark symbol).

It works in Word too.
