Yes, you can. That will work fine.
HOWEVER: There is a "gotcha"
The Word TOC and Index generators cannot see inside "floating" objects.
That's partly because the floating objects are all piled together beneath
the last page of the document, in the "Object Store". So they don't have a
page number.
Tables are not usually "floating" objects. But in modern versions of Word,
they CAN be. To find out, select a table and look in Table>Table
Properties...
If the "Text Wrapping" is set to "None", the Table is in the actual text and
it will be fine. If the wrapping is set to anything else, it's floating,
and the TOC generator can't see inside it.
The cure would be to set the property to "None" for that table. You may
then have to move it to the correct placement in the text.

I don't know if it is possible, but I have a full document that has been laid
out in tables. Can I add a heading style (heading 1 for instance) to a cell
and have the TOC automatically pick it up as it does in an ordinary document.
Any help would be much appreciated
