Tables, cells, text.?

Would using text in tables and cells be preferable over using just text in a
blank document ?
Do you use 1 cell for each word?

Depends on what the text is about. If not in a table cell the text
would be in a paragraph or other container.

You do not use 1 cell for each word (except, possibly for headings).
Each cell would be for 1 topic which could be a dozen sentences or
paragraphs.
