Tables in 2010 using compatibility mode

Feeling frustration again with 2010, just trying to make labels -
nothing fancy. I had my old version of word set up with buttons so I
could do what I wanted in tables with no fuss, so I have to relearn
this. I went to the tutorial at
but doesn't mine doesn't look or behave like the one on screen.

My Table Tools tab looks like this

and when I click "align" everything is grayed out

I also need to know what auto fix behavior is. I want fixed cells and
I want to center align the text inside each cell. I want to expand
them and auto adjust them so each one is the same size. I'm sure I'll
have follow up questions, but first I need to get that far. This
sheet of paper goes to the edges, so will I be able to print out of
the margins?

Took a deep breath and got away from it for a while, now I see I have
to go to Layout tab to find the buttons I need. Lots of flipping
around, not very efficient - but I'll manage.

I still need to know how to make *fixed* columns/rows (other than
calculating exactly how large I want each one and entering the number)
and wondering how to deal with a sheet of labels for which I can't
find a commercial template and that uses the entire sheet. 33 labels,
no margins. Exactly 3 columns from left to right edges, 11 rows from
the top edge to the bottom edge with nothing gone to waste.

I don't know how I did it, but the cells stayed the same size and
lines wrapped - so that's over. Copy paste removes formatting, not
sure how to fix that - but I reformatted groups of cells using the
ctrl button. Now I need to figure out how to remove the grid lines.
After that, the rubber hits the road.
