Is "Paste Special" the only way to insert a Word table in Entourage?

That doesn't work - not as a real table. You can Paste Special > As Picture
into HTML, as a picture (not a table), if that's what you mean. Yes.

In Word 2004, you can prepare a document to have just the table, plus all
other text you want in your email message - do it all there in Word. Then
File > Send To > Mail Recipient (As HTML), and it will appear in Entourage
as an HTML message ready to go, including a real table. All you do then is
fill in the recipient, and send it. You can't edit it in Entourage.
