I have colleagues who use MS Outlook and wish to assign and coordinate tasks with me, is this possible between Outlook and Entourage?

Sorry, no, Entourage does not support this.

Also, the Entourage for Exchange Web Services update, which is currently
in beta, will allow you to sync Tasks to your Exchange Server but it
will not enable you to send/receive/assign tasks. Only Outlook has this
feature.

Please be sure to let Microsoft know you'd like to see this feature in
future versions by using the Help --> Send Feedback mechanism in any
Office application.
