I have a task that is due to take 3 days but it will be completed over of
duration of 5 days.

Example: A task 3days but will be split during the week. Resource will work
on it Mon, Wed and Fri. How do I allocate the task time for this?

If I assign it as a 5 day, task resources will be requested to fill in
timesheets, which is not relevant.

You need to assign the work in the Task or Resource Usage views on a day by
day basis.

Not sure what you mean by your last statement, whether the task is 5 day or
every other day, the resource will be requested to fill in a timesheet.
There wouldn't be any difference there in my opinion.
