Template modifications

Am running Infopath 2007 with Sharepoint.
I need to rename some fields but I want the old forms NOT to lose data. Is
there a way to have earlier forms link to an old template but new forms to
link to a new one?

You have to use seperate templates.

In SP2007 you can use seperate templates for one Document library. Content
types
