Templates on Server?

Is there a way to have a shortcut to a server location that will show
up on the "Project Gallery"? When my users open a template file
(excel) directly on the server, it creates a copy and not a 'new' file
as it should.

You could Command-Option-drag the folder from the server to this location
Microsoft Office X/Templates/
or
Microsoft Office 2001/Templates/

That'll create an alias, and when you launch Excel in the future, you can
click the name of the server folder in the Project Gallery's left pane and
you'll then see all templates inside it. However, you should probably be
connected to the server first - complications might arise if you're not.
