is it possible to create a new template with the current
contact's details already in it? ie somehow double click
or right click on a contact in outlook and it would
automatically open a (preselected in options) template
with the contact details already inserted?

What kind of template? Word document? Outlook form? Both are possible but may require some custom coding.
