This is what i want to do: create a document that can be saved, then later,
opened and used as a form. I want others to be able to type in data but not
be able to delete the original form I created. Is this a template? If so, I
cant figure out how to protect what I create.

If this in Word, Forms is what you are wanting.
The MVP site has plenty of helpful hints on creating formas and Protecting
them so the user can only edit where you want them to.
