Terminal Server - Office Upgrade

I have a Win2K/Citrix Metaframe XP server that currently has Office 2000
installed on it. I want to 'upgrade' to Office 2003. Can this be done? We
have an enterprise license for Office, so I don't have a licensing issue. I
want to preserve the configuration info for each of the users so that I
don't have to reconfigure Outlook for each of them.
