Text format changing after excel spreadsheet saved.

Operating System: Mac OS X 10.5 (Leopard)

I have been working with upc codes, saving the "text" cel column. After saving the sheet, the beginning numbers are reverting back to whatever.. the "0"'s are disappearing (if the starting numbers). I have tried to keep them, but as soon as I close and save the doc. they are gone when I re-open them.
Does this make sense? I need to correct this immed. Is this a problem all around or something I cannot figure out?

Values don't have leading zeroes, so you need to change the formatting of
the cells to Text before entering the numbers or type an apostrophe ( ' ) as
the first character followed by the digits. The apostrophe doesn't display
or print.
