In the event that one or two others may benefit from the solution to
my problem;
The Problem: When I installed Microsoft Office I opted not to install
the Microsoft OutLook program included in the disk. In doing so, when
it came to trying to configure text only email, there seemed no way at
all. HTML seemed the default with no other options.
The Solution: I went back to my disk and installed OutLook. After
doing so there were options to disable HTML allowing for text only in
email .
As SA points out;
1) In MS OutLook itself Tools --> Options --> Mail Format
2) In Microsoft Office choosing when choosing to write an email item
there's an option in on the tool bar for "Plain text" "Rich Text"
or "HTML"
Problem solved. Thanks to those with good suggestions.

To follow on to Milly's reply, to send plain text messages there are two
ways to do so;
1.) Either when the mail item is being composed, from the format menu choose
plain text, or
2.) In Outlook, select Tools, Options and on the Mail format tab, set your
default mail format to "Plain Text".
