Text size when viewing emails. How to increase it permenantly?

By default the text size when viewing emails is set to medium. How can one
increase that size & make the change permenant?
I am aware of the option to increase text size once the email has been open
via 'View' >> 'Text Size'' & you can choose 1 of 5 settings. What I would
like to know is how to make the default largets instead of medium.
