Hi Chris!

With
start time in A1 in hh:mm:ss format
finish time in B1 in hh:mm:ss format
C1 formula:
=B1-A1-1/48
Format hh:mm:ss

Time is recorded as a decimal part of a day and thus 30 mins = 1/48 of
a day.
