Times New roman replaces text

When i send and Email the body of the message text is replaced by the words
Times New Roman

After furious head scratching, kenblaz asked:

I think it's got something to do with using Word as the Email editor in any
outlook program Pre 2003. This coupled with the fact that all of my
signatures have pictures on them. I just don't know what the ideal settings
are to allow my signatures to show in the correct format and to also get rid
of this Times New Roman message !!!
