Hi mad Frankie Caterer!

Select the cells
Format > Cells > Currency
From Symbol dropdown select "English (United Kingdom)"

You can also change the default by changing your Regional Settings:

Start > Control Panel > Regional
Change the country to "English (United Kingdom)"
Apply
OK

But note that this changes other options such as the date default.

In yopur system's control panel (I can't be more specific as I do not
know your operating system type) there is a regional settings applet
that defines the currency symol to use on the PC. Is it possible that
this is causing your the problem.

If you are construction a template that will be used in multiple
regions, you will need to create custom number styles for each region
as the 'currency' format that ships with excel is senistive to the
control panel settings i advised of above.

Another method without changing Windows defaults....

Format>Style>Currency>Modify>Number>Currency>Symbol>English(United Kingdom)>OK
your way out.

The Currency($) button on Formatting Toolbar will take that Format as default.
