I'm hoping that someone can answer a couple of questions I have about using
track changes in Word 2003.
1) How can I set the color that apprears when I make changes and have the
same color apprea when others open the document to review?

2) Is there a limit to the number of persons who can review a document?

3) Can you prevent reviews from seeing changes made by others?

You can't. Word picks the colors, and they may be different on different
computers. You have no control of this at all.
2) Is there a limit to the number of persons who can review a document?

There is no limit to the number of reviewers, but there are only 8 different
colors, and after that two or more reviewers will be assigned the same color.
3) Can you prevent reviews from seeing changes made by others?

Only by not sending them a copy that contains the changes. You can make a fresh
copy of the original document for each reviewer, or you can accept or reject
every change before sending the document to the next reviewer (if they're
receiving it one after another instead of simultaneously). If the changes are
still in the document, they can be displayed -- there's no way to "lock" them.
