My client wants to send a document to someone outside their organization and
want the previous vesion/changes not to be seen by that person. Turning off
"tracking" doesn't seem to do it

Go to the top line menu. Select VIEW - TOOLBARS - REVIEW . From the
Review toolbar select SHOW and deselect those items you don't want to show.

This still won't do it - the changes will still be there, able to be
seen by anyone with a modicum of Word expertise. To make the tracked
changes disappear forever, you need to accept or reject them. I don't
have Word XP handy, so I don't know the step-by-step instructions, but
somewhere under Track Changes there should be a button to "Accept all"
or similar.
