There is no way to with Outlook, but I use 2 programs and they work very well for tracking.
www.msgtag.com ($19.95) and
www.readnotify.com ($24.95). Readnotify is a more advanced tracking program, which shows when opened, how long, if it was forwarded,etc. and you can set up all sorts of options. Msgtag is very good, but very basic
