Tracking time by the hour w/Excel

Operating System: Mac OS X 10.5 (Leopard)
Processor: Intel

I know how to track time by the hour, but I need to remove the non work hours (between 5pm and 7:30 am & weekends).
Network days removes weekends, but how do you remove the hours that are not working day hours?
