For Example... If I am putting together an employee feedback form and polling
a number of people is there a way that I can look at the "tracking" tab and
see all of the feedback that has been posted?

The tracking tab won't show you anything unless all your form consists of is a single voting button set. Instead, modify the folder view to add the fields in your custom form that collect the data.

Look at the commands on the View menu, particularly Arrange By | Current View | Customize Current View and Define Views.
