Transfer contact info in email to Contacts

Is there a way for Outlook to recognize the name, position, phone number etc
in a received email so that it can easily be converted into a new contact (or
update) in Contacts?

Outlook has no built-in way to parse the body of a message looking for form
fields. If the sender were to send you a vCard attachment, you'd have the
information in a form Outlook could use directly. There may be add-ins you
can buy that will perform the action you seem. Start here:

i have just returned to PC after a brief period with Mac and i just vaguely
remember from earlier (?) versions that when dates and times were mentioned
in an email that Outlook offered to create an appointment and when it
detected contact info it would offer to create a contact. I don't remember
using any add-ins for this.

I don't recall that ability in any version of Outlook on a PC. You can
certainly drag a message to the calendar and create an appointment from it,
but it won't gather any of the body information for pre-establishing the
parameters of the appointment.
