Trouble with Defaults in Font, Colo, Size, Background

I had just downloaded (or thought I did) Office XP 2003. I will explain that
in another question as it is complicated.

Anyway, my earlier version of Outlook and this one (2003) give me same
problems.
I always had a default email that was satisfactory or could be changed.
Suddenly, the default changed without my doing anything. I finally decided to
change to this newer version in the hope the old problems would go away, but
they did not.

When I write new or reply my type looks like it must be a -10 size as it is
too tiny to read. I set the Font at TIMES BOLD 14 PT BLUE so I should have
a good sized, bold, blue letter when typing. Instead I get the tiny, tiny
font and cannot change it. I want to be able to have a default setting for
all my emails where I always have the same FONT, size, color, background, and
other attributes. So far, with lots of trying, I only make things worse.

To make matters worse there is a default coming up that is awful. It is
invisiable as the font is unknown, size 10, color light yellow on a white
background. I cannot get rid of this and it always comes up on my new emails
with typing already visiable. The words look like part of my signature. No
matter what I do, these awful default values will be use and I have to cut
out the unnecessary typing in the and formatting.

I need to know how to get rid of the old format forever and put one in that
I like. I can't seem to do this after never having a problem like it for
years.
