Truncating Fields

Hi,
I have a table with zip codes in it, but at the end of
each zip code is a - for example '90210-'. I wish to
delete this - from the field. Is there way to make a
select (make-table) query that selects just the 1st 5
characters of field? Also if I have a field with first
and last name is there a way to split this up?
