Turn off automatically putting today's date on a document

Have just started using Office for Mac 2008 but am encountering an
annoying problem! I started work on a document two days ago, and dated
it accordingly - then went back to it today. But it now insists on
putting today's date at the top of the document. I went to the auto
text function, and unticked the Auto complete box - then went to the
text and changed it back to the earlier date - but it still insists
on changing the date field to today's date. Could anyone advise on how
to get round this? Thanks in advance.

It's not related to AutoComplete or AutoCorrect. The keyboard shortcut
for Insert Date, and the icon on the header/footer toolbar insert an
automatically updating date field, {DATE}, so if either of those were
used in creating the doc, you get date changes. If you use the Insert |
Date and Time dialog, you can turn the updating function on or off.

To fix old docs, select the field, toggle field codes on the right-click
menu (or hit opt-F9), and edit the DATE field to CREATEDATE.

For the future, you could make the {CREATEDATE} field into an AutoText
entry and assign it a shortcut.

What about that appalling function that completes a date that you start to type in British format with an abbreviated US format when you press return - resulting in something like this:
4th July 2008-07-04

I can't believe Microsoft left this wretched function in any version of Word let alone a new one.

Please tell me how to switch it off, it's driving me mad!
