Turn off hidden text as a default in Outlook 2007?

Somehow, I don't know how, hidden text is the default for composing emails,
contacts, calendar items, and tasks. I have researched and researched,
hunted and hunted and tried everything I can think of to get hidden text to
be turned off, but it keeps coming back. Even my signature gets hidden.
It's probably something I fat fingered I guess, I don't know but if anyone
can tell me how to get hidden text not to be the default, I would be most
appreciative.

So CTRL+SHIFT+8 doesn't work?

When composing;
Office Logo-> Editor Options-> Display-> deselect everything
