Turn off hyperlinks?

whenever I enter or attempt to edit an e-mail address in
Word, Excel, or another office component, the darn thing
tries to open my e-mail application and send an e-mail.
How can I turn this annoying behavior off?

You don't mention your version, but have you tried "Help" when you have
the Application in question open?
