What version of Word are you using? Office 2007 offers some additional possibilities.
You can tweak the perception of the color bar widths in the presets or gradients by using the dark/light controls and transparency
on the colors and you can use an outside graphic gradient (like those used in web page backgrounds) as a fill.
Can you be more specific in the difference you're trying to achieve?

Is there a way to tweak the fill-effects, in other words vary the width of
the shading between colors or the width of a given color. Similar to how the
"presets" are done. Or is there a away to create my own "presets"?
