Typed Text Changing Language

After using the Office Repair Tool to re-instate my print to One Note driver,
which worked perfectly, I now seem to have a new problem. When I type in One
Note it is automatically changing my english text to chinese? symbols.

How do I disable this function so that my english text remains as typed?

And are the settings in Control Panel - Regional & Language Options correct?
