Undesirable behavior by Word

After getting my document just perfect, bizarre changes occur for no apparent
reason. These include:
- all bullets disappearing
- a long series of paragraph marks being inserted into the footer so that
the footer takes up half the page
- a long series of paragraph marks being inserted above the footnotes so
that the footnote section takes up half the page (you see the line separating
the text from the footnotes and then 11 double-spaced blank lines that I
cannot remove, then the actual footnote with its number)

When exactly do these unwanted behaviours occur?
(When opening after having saved, when merely saving, while typing, etc.)

Is the problem local to one document or is it a generalized thing?

It's Word 2007. As far as I know it's just this one document. The document
was originally written in Italian in several different pieces. I translated
them into English and put all the pieces together into one document.

These are the behavoirs:
1. I want to center align some text (which is followed by a paragraph mark).
I highlight it, click the center align button and the whole document center
aligns! I click "undo" and the document goes back to normal BUT I do have the
bit of text center aligned as I wanted it. This may also happen with
boldface. Recapping: in order to get what I want, I have to click the command
and then click "undo".
2. My document is written in Times New Roman, it is double spaced, I have
bullet points here and there. But I have a table with a word in italics that
I want in normal font. I highlight the word and hit Control + I on the
keyboard. Result? The whole document goes single spaced, my bullets disappear
and I find a mixed font. Usually if I hit "undo" I can save things.
3. But, the really evil thing that happens while all this other stuff is
going on is that paragraph marks get added into the footnote space. So, on a
page where there is a footnote, instead of having the footnote at the bottom
in a space that is just big enough for it, with a line over it separating it
from the main text, I have the footnote at the bottom with about 10
double-spaced paragraph marks above it in this empty space, and I have found
no way to get at them so I can delete them. My mouse cannot "touch" them, the
find function cannot find them. I found out that if you punch your LCD
display it doesn't work anymore.
