Along the same line: now that the final release is out, I
assume the best practice would be to uninstall the beta,
then install the final release (full version). Will
this "final release install" overwrite Outlook .pst files,
thus "destroying" data?

Repeat - uninstalling the beta does nothing to your files. They are still
there and when you install the full retail product, it will use your default
files.
