Last point first: No, as a rule updates cannot be removed. Once applied
you'd have to run the Remove Office utility, re-install, then update to the
preferred level. However, that shouldn't be necessary -- there has to be a
cause for the crashes and the update itself isn't it

Crashes are not
"common" on properly managed Macs. They do occur but the causes can
typically be addressed. Besides, the updates are provided for good reason &
reverting can cause more harm than good.
What is your current update level of OS X? That could come into play.
Did you have any programs running when you applied the update?
Have you run Disk Utility - Repair Disk Permissions & restarted your Mac
since updating? If not, do so now & see if that makes for any improvement.
Also, log in while holding the Shift key - Any change in behavior? Does the
crashing occur if you run the programs from a different User Account?
If the problem continues please provide specifics about exactly what your
definition of "crash" is, when it is that the crashes occur -- on launch,
on, Save, on Quit???, and the accurate wording of any error messages that
appear. [Please don't try to submit Error Logs from the MS Error Reporting
feature unless requested, though - most of us have no more idea what they
are all about than you do
