unlinking e-mail address in excel

When i cursor to a cell with an e-mail address, it
automatically creates an e-mail to that person. How do I
turn off that function

hit ctrl-z (edit undo) as soon as xl converts it.

Start with an apostrophe:
'(e-mail address removed)

If you're using xl2002+,
tools|autocorrect options
"autoformat as you type" tab
uncheck that option

(This affects URL's, too.)
