Here are the steps that I have used before. These are not detail steps.
1. Restore the content database to a new sql server database.
2. on a test WSS server attach the new content database
3. find the url of the site that contains the documents you wish to restore.
4. Use STSADMIN.exe to backup the site with the documernts you wish to
restore.
5. Use STSADMIN.exe to restore the site to your production WSS site.

Hope this helps.

Unless you explicity checked the box to delete the Sharepoint site when you
deleted the project, the documents, issues and risk are still available. The
Sharepoint site is only deleted is explicity indicated. Your challenge is to
find the site number but you can do this by a process of elimination.

The solution to your problem depends on what you want to accomplish. If you
only want to gain access to the documents, issues and risks etc, you only
need to type the URL of the SharePoint site in Internet Explorer (i.e.
http://MPS:80/projectservername_sitenumber). If you want to connect the site
to a new plan, you add the plan to MPS, go to Admin/Manage Windows SharePoint
Services, locate the new project name, highlight and press Edit Site Address.
Update the address with the SharePoint site number of the project you
deleted. Don't forget to delete the SharePoint site associated with the new
project though.
