Use Character Number in Search/Replace?

Two part question:

Part 1:
Is there a way to do a search and replace where the
search text is a hyphen and the replacement text is
actually a character number (4051) in the symbol font?

Part 2:
Can I set it up to only search the selected text, not the
entire document?
