User input question

Hello,

I run a small website for a local amusement park.
I would like to offer a "dollar off" type of coupon to the site
visitors.
At the same time I would like to capture their email addresses for
future offers.

This is not an ecommerce site. I've looked at several of those type
of programs and feel they are too robust for my needs.

I've also looked at several PHP and CGI scripts and none seem to fit
my needs either.

Simply stated, the visitor would click on a jpeg type graphic that
describes the offer, and be sent to a page to input their name and
email address.
A coupon would then be sent to their email inbox for later redemption
at the amusement park.
Capturing their email address for later offers is what has me
stumped.
I, of course would post all the necessary privacy disclosures etc.

Any help or steering in the right direction would be appreciated.

Thank you,
