users cannot open form

I have 2 problems with a form. I have it saved on a remote server in a
folder with other office documents. I then have a link to that folder and it
pulls up all the docs as templates ready to be opened. All the other Office
docs open, but when they try to open info path, they receive a security
warning and are not allowed to open. I can access and open the form with no
problems. I have it set to publish and allow other users. The 2nd problem is
I have saved an email address under the data connections. When the submit
button is pressed it opens Outlook, but name is in the send location.

Hello,

a) When you published the form, did you publish it to the same network
folder that it currently lives in? If you didn't, when users open the form
they will receive the security warning.

If you did publish to the same location, you may need to sign the form so
that it is "trusted". Check the Infopath help for signing a form to make it
trusted, but basically you need to use a code-signing certificate.

b) By "name" do you mean the email address for the email data source? i.e.
is (e-mail address removed) the email address? This is OK if that is the case. Otherwise,
Outlook may recognise the email address as someone's name and be putting the
"display name" in the To address automatically.
