Using Multiple Email Addresses with One Exchange Box

Thanks to Roady's help I now think that I have a good understanding of
how Hosted Exchange works and how it can be a benifit for me. I have
one last hurdle that I am sure others have experienced and I am
wondering how you do it. Currently I am using several POP3 email
accounts. I have several different domains all of which are important
and very different. For example one is blackcows.com which is used
for our cattle business and another is infantilespasms.com which is
seizure disorder that my son has. It won't be a problem to alias all
of these to an exchange mailbox but I am unsure of a few things. Here
are my questions:

1. If I do alias email addresses to my exchange box will they show as
being sent to the email address that the sender choose such as
(e-mail address removed) or will Outlook recognize them as being sent to the
exchange mailbox? The reason that this would be important to me is
that I use rules in Outlook to sort my Inbox. If all of the alias
show as being sent to the Exchange box none of my rules will work.

2. Are rules local? I am assuming yes so does this mean I would (or
could) set up rules on OWA and my MS Mobile 5.0 phone? Is it possible
for me to use rules on my exchange box before it gets to any devices
or my local computer?

3. It is my understanding that if I do use aliasis that any replies
would come from my exchange mailbox address rather than from the
address to which they were sent. Is there anyway around this? This
seems to be my major delima with the change to Hosted Exchange. If I
am correct the first message will make it to the correct folder based
on the rules but if I continue to exchange replies the return to my
return won't because after the initial reply all messages will show as
coming from my exchange box address (hope that makes sence).
