Utilisng existing custom properties

I am trying to assign custom properties to shapes and want to use properties
that exist in other shapes that don't currently exist in the one that I am
working on. Is there a way to select an exisitng Visio property when I setup
a new custom property. If I was to type in 'Tag' for instance which is an
existing property would this pick up the existing features of this property
type.

You might try Tools > Custom Property Sets to see if this addresses your
situation. You can create a Property Set from some existing custom
properties. Then these properties can be assigned to other shapes or
masters.
