Is it possible to set up a 3 page document so the first page is portrait
and the last 2 pages are landscape?

One way in Word 2003 is to put the cursor at the start of the second page
and use
File > Page setup > Margins

and select "Landscape"

and under "Apply to" select "From this point forward."

imimin: In addition to MyVeryOwnSelf's comments, if you are planning to use
Headers&Footers in this document you will need to unlink them from the
previous section (i.e. the portrait one) as the method mentioned does not do
this automatically.
