I have a situation where I create an excel spreadsheet by opening a text document. When the data is imported into Excel, a row is added between each data value in the column.
After I open the data in Excel, how can I get excel to hide the alternate rows that are blank, so that I can manipulate the data without extra rows

I have encountered this before and have solved it by sorting the whole
of the input range (descending).

Please note that thi smay put your data out of the original sequence,
so you may need to re-sort the resultant rows (without blank lines) to
correct this.

One way, without sorting, is to choose a column where there are always blank
cells on the 'blank' rows and never blank cells on the 'non-blank' rows.
Select the column, then Edit / Go To / Special / Blanks. This will select
all of the blank cells in the column. You can then right-click on this
selection and Delete . . / Entire Row.
